- 1 tsp cinnamon
- 3 tsp vanilla extract or paste

Prepare the Sweet Potatoes
Preheat the oven to 400°F.
Lightly coat the sweet potatoes with olive oil and poke several holes in each potato with a fork.
Place the sweet potatoes on a baking sheet and bake at 400°F until fork-tender, about 45–60 minutes, depending on the size of the potatoes.
Remove the sweet potatoes from the oven and allow them to cool enough to handle.
Peel the sweet potatoes and place the cooked potatoes into a food processor or use an immersion blender to blend until smooth.
Make the Pie Filling
Transfer the blended sweet potatoes to a mixing bowl and blend until smooth.
Add the sugar, brown sugar, and melted butter. Blend until well combined.
Add the eggs and blend until completely incorporated.
Add the salt, nutmeg, cinnamon, vanilla extract or paste, and milk. Blend until smooth and fully combined.
Bake the Pie
Pour the sweet potato mixture into a prepared, prebaked pie crust.
Bake at 350°F for 60 minutes, or until the pie is set.
Remove the pie from the oven and allow it to rest and cool before slicing and serving.
