  • 1 cup sugar
  • 1 cup brown sugar
  • 1/2 stick melted butter
  • 2 eggs
  • 1/4 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 3 tsp vanilla extract or paste
  • 1 cup milk
  • 2 Pie crust

How to make this Delicious Sweet Potato Pie

1. Prepare the Sweet Potatoes

Preheat the oven to 400°F. Lightly coat the sweet potatoes with olive oil and poke several holes in each potato with a fork. Place the sweet potatoes on a baking sheet and bake at 400°F until fork-tender, about 45–60 minutes, depending on the size of the potatoes.

Remove the sweet potatoes from the oven and allow them to cool enough to handle. Peel the sweet potatoes and place the cooked potatoes into a food processor or use an immersion blender to blend until smooth.

2. Make the Pie Filling

Transfer the blended sweet potatoes to a mixing bowl and blend until smooth. Add the sugar, brown sugar, and melted butter. Blend until well combined.

Add the eggs and blend until completely incorporated. Add the salt, nutmeg, cinnamon, vanilla extract or paste, and milk. Blend until smooth and fully combined.

3. Bake the Pie

Pour the sweet potato mixture into a prepared, prebaked pie crust. Bake at 350°F for 60 minutes, or until the pie is set.

Remove the pie from the oven and allow it to rest and cool before slicing and serving.

Tina’s Tips

  • Make sure the sweet potatoes are very tender before blending. This helps create a smooth, creamy filling.
  • Let the pie cool and rest completely before slicing so the filling has time to set.

Frequently Asked Questions

How do I know when the pie is done?

The pie should be set around the edges with the center slightly soft. It will continue to firm up as it cools.

Why does my sweet potato pie need to cool before slicing?

Cooling allows the filling to finish setting, which helps the slices hold their shape.

How should I store leftover sweet potato pie?

Start checking around the 35-minute mark. The cake should be set in the center, and a toothpick inserted into the middle should come out clean or with just a few moist crumbs.
