Ingredients

  • 4 boneless, skinless chicken breasts
  • Fresh handful of spinach
  • 3/4 cup heavy cream
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 5 tablespoons butter
  • Olive oil
  • Cajun seasoning

Instructions

Cook the Chicken

Preheat the oven to 375°F. Heat olive oil in a skillet over medium heat.

Season the chicken with Black pepper, onion powder, garlic powder, smoked paprika, and seasoned salt. Place the chicken breasts in the skillet. Cook the chicken for 7 minutes on each side.

Add chicken to an oven-safe dish. Add a pat of butter to each piece of chicken.

Bake until the chicken reaches an internal temperature of 165°F.

Cook the Spinach

In the same skillet, add 1 tablespoon of butter. Add the fresh spinach and cook until the spinach has wilted down. Remove the spinach from the skillet and set aside.

Make the Creamy Spinach Sauce

In the same skillet, add the heavy cream. Add the Parmesan and mozzarella cheese. Stir until the cheeses are melted and the sauce is creamy.

Season with Cajun seasoning. Add the cooked spinach back to the sauce and stir to combine.

Finish the Chicken

Return the cooked chicken to the skillet. Spoon the creamy spinach sauce over each piece of chicken. Serve warm.

Tina’s Tips

  • Use a meat thermometer: The easiest way to know the chicken is done is to check that the thickest part reaches 165°F.
  • Adjust the seasoning: Cajun seasoning can vary in saltiness and spice, so season according to your taste.

Frequently Asked Questions
